  • 1 pound chicken sausage
  • 4 medium potatoes, diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 bunch kale, chopped
  • 1 cup heavy cream or half-and-half
  • Olive oil
  • Red pepper flakes (optional)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add chicken sausage and cook until browned.
  2. Sauté diced onion for about 3-4 minutes until softened; add minced garlic and cook for 1 more minute.
  3. Stir in diced potatoes and pour in the chicken broth. Bring to a boil and then simmer for 15 minutes until potatoes are tender.
  4. Add chopped kale and red pepper flakes if desired; cook for another 5 minutes.
  5. Lower the heat and stir in heavy cream. Season with salt and pepper to taste.
