  • 2 cups chopped bell peppers
  • 2 cups chopped onions
  • 1/8 cup pickling salt
  • 3 1/2 cups cane sugar
  • 1 tablespoon celery seed
  • 2 teaspoons yellow mustard seed
  • 2 cups apple cider vinegar (5% acidity)

Instructions

  1. Wash and chop zucchini, bell peppers, and onions into small pieces.
  2. In a large bowl, mix the chopped vegetables with pickling salt, cane sugar, celery seed, yellow mustard seed, and apple cider vinegar until well combined.
  3. Transfer the mixture to a large pot over medium heat. Bring to a boil while stirring frequently; let it simmer for about 30 minutes until slightly thickened.
  4. Carefully ladle the hot relish into prepared canning jars, leaving about 1/4 inch of headspace.
  5. Wipe jar rims clean and seal with lids. Process jars in boiling water for 10-15 minutes.
  6. Remove from water and let cool completely before storing in a cool dark place.
