  • 35 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 cup beef broth
  • 1 tbsp dried chives
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp dried dill
  • 1 tsp salt
  • 1 tsp black pepper
  • 68 whole pepperoncini peppers
  • 12 tbsp pepperoncini pepper juice
  • 4 tbsp ghee

Instructions

  1. Prepare the chuck roast by seasoning it generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the roast for about 1-2 minutes on each side until golden brown. Transfer to the slow cooker.
  3. Deglaze the skillet with beef broth, scraping up brown bits, then pour over the roast.
  4. Add chives, garlic powder, onion powder, dill, salt, black pepper, whole pepperoncini peppers, and their juice on top of the meat. Finish with ghee.
  5. Cover and cook on low for 8–10 hours or high for 5–6 hours until fork-tender.
