  • 2 cups chopped rotisserie chicken
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 2 apples (peeled and roughly chopped)
  • 1 white onion (peeled & roughly diced)
  • 4 tbsp butter
  • 1/4 cup flour
  • 2 1/2 cups chicken broth
  • 3/4 cup half & half
  • 2 cans cannellini beans (drained)
  • 2 cups shredded Mexican blend cheese
  • Salt and pepper (to taste)

Instructions

  1. In a Dutch oven, heat olive oil over medium heat. Add chopped apples and onions; cook until soft (6-8 minutes). Stir in chili powder and cumin.
  2. Reduce heat to medium-low, melt butter in the same pot, then whisk in flour for about a minute.
  3. Gradually add chicken broth while whisking until smooth. Mix in half & half and simmer until thickened (3-5 minutes).
  4. Combine the chicken, drained beans, and apple-onion mixture into the pot.
  5. Adjust consistency with extra broth if needed; stir in cheese until melted.
  6. Serve warm with your favorite toppings.
