  • 1 kg beef (chuck or stewing beef), cut into chunks
  • 3 red bell peppers, deseeded
  • 3 scotch bonnet peppers (adjust to taste)
  • 1 medium onion
  • 400 g canned tomatoes
  • 1 cup vegetable oil
  • 3 tsp chicken bouillon powder
  • 1 tsp salt

Instructions

  1. Season beef chunks with salt and chicken bouillon powder in a large pot. Add chopped onions and enough water to cover the beef. Boil, then reduce heat and simmer until tender.
  2. In a blender, combine red bell peppers, scotch bonnet peppers, canned tomatoes, and onion; blend until smooth.
  3. Heat vegetable oil in the same pot over medium-high heat. Fry the blended mixture for about 15–20 minutes until thickened.
  4. Add cooked beef back into the pot with some reserved broth. Simmer uncovered for another 15–20 minutes.
  5. Taste and adjust seasoning if necessary before serving hot over rice or yams.
