  • 240ml dairy-free milk
  • 1 teaspoon apple cider vinegar
  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 60ml sunflower oil
  • 210g dairy-free block butter (for frosting)
  • 200g icing sugar
  • 20ml aquafaba (from chickpeas)
  • 4 ground Oreo crumbs
  • 100g dairy-free dark chocolate
  • White chocolate buttons
  • 1 pack of Oreo cookies

Instructions

  1. Preheat your oven to 180°C (350°F) and line a cupcake tin with baking liners.
  2. In a bowl, mix dairy-free milk with apple cider vinegar; let it sit for about 5 minutes to curdle.
  3. In another bowl, whisk together self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda.
  4. Combine sunflower oil with the curdled milk mixture and stir well.
  5. Gradually add dry ingredients to wet ingredients and mix until just combined.
  6. Pour batter into the cupcake liners and bake for 20-25 minutes or until a toothpick comes out clean.
  7. For frosting, beat dairy-free block butter with icing sugar until creamy; add aquafaba until the desired consistency is reached.
  8. Cool cupcakes completely before frosting and decorate with ground Oreo crumbs and melted dairy-free dark chocolate.
