  • 8 pineapple rings
  • 1 cup dark vanilla extract (alcohol-free)
  • 1 cup coconut vanilla extract (alcohol-free)
  • 1.5 cups all-purpose flour
  • 10 oz sweetened coconut flakes
  • 2 large eggs
  • 0.5 cup coconut milk
  • Vegetable oil for frying
  • 4 oz cream cheese, softened
  • 0.5 cup powdered sugar

Instructions

  1. Soak pineapple rings in dark and coconut vanilla extracts for at least 1 hour; drain and pat dry.
  2. Prepare three shallow bowls: one with flour, one with whisked eggs and coconut milk, and one with coconut flakes.
  3. Coat each pineapple ring in flour, dip into the egg mixture, then coat with coconut flakes.
  4. Heat vegetable oil to 350°F (175°C) in a deep pot; fry the coated rings for about 1 minute per side until golden brown. Drain on paper towels.
  5. For the dipping sauce, mix softened cream cheese with powdered sugar and reserved vanilla extract until smooth.
