  • 3 pounds fresh jalapeño peppers
  • 2 cups apple cider vinegar
  • 6 cups white sugar
  • 1 tablespoon celery seed
  • 1 tablespoon mustard seeds
  • 2 teaspoons garlic powder
  • Optional: 1/2 teaspoon cayenne pepper (for added heat)

Instructions

  1. Prepare your water bath canner with sufficient water and bring it to a boil.
  2. Slice jalapeños into 1/4-inch rounds, using gloves if desired.
  3. In a large pot, combine apple cider vinegar, sugar, celery seed, mustard seeds, garlic powder, and cayenne pepper (if using). Boil until sugar dissolves and simmer for 8 minutes.
  4. Add sliced jalapeños to syrup and cook for about 5 minutes.
  5. Sterilize jars in boiling water.
  6. Using a slotted spoon, fill jars with jalapeños leaving 1/4 inch of headspace.
  7. Boil leftover syrup for an additional 10 minutes until thickened; then ladle over jalapeños in jars.
  8. Remove air bubbles and wipe jar rims before sealing.
  9. Process filled jars in boiling water for 20 minutes and let cool completely.
