  • 2 tablespoons sugar
  • 1 cup unsalted butter (cold)
  • 1/4 cup ice water
  • 1/4 cup lemon juice (cold)
  • 1 lb sweet potatoes (about 2 medium)
  • 5 tablespoons unsalted butter (softened to room temperature)
  • 1 cup dark brown sugar (packed)
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cups evaporated milk
  • 1 tablespoon vanilla extract
  • 1 egg (for topping)
  • 1 tablespoon milk (for topping)
  • whipped cream

Instructions

  1. Preheat oven to 400°F (200°C). Wash, peel, chop sweet potatoes, boil until tender for about 15-20 minutes. Drain and mash.
  2. In a mixing bowl, combine flour, salt, and sugar. Cut in cold butter until crumbly. Add ice water and lemon juice until dough forms. Chill for at least 30 minutes.
  3. Cream softened butter and brown sugar until fluffy. Mix in mashed sweet potatoes, followed by eggs one at a time. Stir in spices, evaporated milk, and vanilla.
  4. Roll out dough into a pie dish. Pour in filling and brush crust edges with egg-milk mixture.
  5. Bake for approximately 90 minutes or until set. Cool before serving with whipped cream.
