  • 1 cup granulated sugar

  • 1½ cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Topping: ¼ cup granulated sugar, 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
  2. In a mixing bowl, cream together softened butter and sugar until fluffy.
  3. Add eggs one at a time, mixing on low speed; then add vanilla and mashed sweet potatoes.
  4. In another bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually combine the dry ingredients with the wet mixture until just mixed. Pour into the prepared loaf pan.
  6. Mix topping ingredients and sprinkle over the batter.
  7. Bake for 55–65 minutes until a toothpick comes out clean. Cool for 15 minutes before serving.
