  • 2 sweet potatoes, quartered (1 pound each)
  • 1 large tart apple, peeled and cored
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 1 large carrot, chopped
  • 1 bay leaf
  • 5 cups chicken broth
  • 1 cup cream
  • Zest and juice of 1 lemon
  • Salt and pepper to taste
  • Crumbled goat cheese or feta cheese for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread sweet potatoes and apple on a greased baking sheet in an even layer.
  3. Roast in the oven for about 40 minutes until tender.
  4. Cool slightly before peeling the sweet potatoes.
  5. In a large soup pot, heat olive oil over medium heat.
  6. Sauté onion, celery, bay leaf, and carrot until tender.
  7. Remove the bay leaf and add the roasted sweet potato and apple pieces to the pot along with chicken broth.
  8. Blend everything until smooth using an immersion blender or regular blender.
  9. Return to the pot, stir in cream, lemon zest, and juice.
  10. Season with salt and pepper to taste; gently warm without boiling.
  11. Serve warm topped with crumbled cheese.
