  • 6 tablespoons cornstarch
  • 50 ml vegetable oil
  • 1 onion, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, grated
  • 432 g tin pineapple pieces, drained

Instructions

  1. Season chicken with salt and pepper; coat in cornstarch.
  2. Heat vegetable oil in a wok or large skillet over medium-high heat; fry chicken until golden brown (5-7 minutes), then set aside.
  3. In the same skillet, stir-fry onion and bell peppers until tender-crisp (3-4 minutes).
  4. Mix ketchup, vinegar, sugar, soy sauce, ginger, garlic, and reserved pineapple juice in a bowl; pour into the skillet.
  5. Add chicken and pineapple back to the skillet and stir until heated through (3-5 minutes).
  6. Serve over rice or noodles.
