  • 1/3 cup vegetable oil
  • 1 3oz. package strawberry vegan gelatin mix, dry
  • 1 cup all-purpose flour (divided)
  • 1 8 oz. package cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 8 oz. tub Cool Whip topping, thawed

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch pan with aluminum foil and spray it with non-stick cooking spray.
  2. In a large bowl, combine the vanilla cake mix, eggs, and vegetable oil using an electric mixer until fully combined.
  3. Press the mixture evenly into the prepared pan and bake for about 20 minutes or until lightly browned at the edges. Allow to cool completely.
  4. For the topping, beat softened cream cheese and powdered sugar together until smooth. Fold in thawed Cool Whip until well combined.
  5. Once the base is cooled, spread the creamy topping over the baked layer and refrigerate until set.
