  • 12 oz fresh strawberries (hulled and finely diced)
  • 1 cup unsalted butter (softened)
  • 2 ¾ cups all-purpose flour
  • 1 egg
  • Granulated sugar

Instructions

  1. In a mixing bowl, beat together cream cheese, sugar, and vanilla until smooth. Set aside.
  2. Toss diced strawberries with sugar in another bowl; let sit for 10 minutes.
  3. Cream butter and sugar in a large bowl until fluffy, mix in egg and vanilla.
  4. In another bowl, combine flour, baking powder, baking soda, and salt; add to wet ingredients until mixed.
  5. Gently fold in strawberries.
  6. Preheat oven to 350°F (175°C). Scoop dough, flatten slightly, add cheesecake filling, wrap dough around it, roll into balls, then coat in sugar.
  7. Bake for about 11 minutes until edges are golden.
