  • 1/4 cup honey
  • 2 tablespoons rice vinegar

  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 1 large onion
  • 4 cloves garlic
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1/4 cup chopped green onions (for garnish)
  • Sesame seeds (for garnish)
  • Cooked rice (for serving)

Instructions

  1. Marinate the chicken by mixing it with soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil in a medium bowl. Cover and refrigerate for at least 30 minutes.
  2. In a small bowl, whisk together the remaining soy sauce, honey, rice vinegar, sriracha, and water to create the sauce.
  3. Heat olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through (about 5-7 minutes). Remove and set aside.
  4. In the same skillet, add more olive oil if needed and sauté chopped onion, bell peppers, garlic, and ginger until tender-crisp (about 5-7 minutes).
  5. Return the chicken to the skillet, pour in the prepared sauce, and simmer for another 3-5 minutes until thickened.
  6. Serve hot over cooked rice or in lettuce wraps.
