  • 1 medium fresh pineapple, peeled, cored, and diced
  • 23 fresh jalapeños, seeded and minced
  • 1 small red onion, finely chopped
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 tablespoon lime juice

Instructions

  1. Prepare the ingredients by peeling and dicing the pineapple, mincing the jalapeños according to your heat preference, and finely chopping the red onion.
  2. In a medium saucepan, combine all ingredients: diced pineapple, minced jalapeños, chopped red onion, apple cider vinegar, brown sugar, ground ginger, ground cumin, salt, and black pepper. Stir well to mix.
  3. Bring the mixture to a simmer over medium heat. Cook for about 15-20 minutes while stirring occasionally until the pineapple softens and the chutney thickens slightly.
  4. Taste the chutney; if you desire more tanginess, add lime juice at this stage and adjust seasoning as needed.
  5. Remove from heat and let cool slightly before transferring to a clean jar or container. Refrigerate until ready to use.
