  • ¾ cup granulated sugar
  • 1 large egg

  • Pink food coloring (optional)
  • 4 ounces cream cheese, softened
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract
  • ½ cup strawberry jam
  • Pink glaze (made with powdered sugar and milk)
  • Sparkling sugar for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat softened butter and sugar until creamy. Add egg and vanilla; mix well. Gradually combine dry ingredients.
  4. In a separate bowl, blend cream cheese until smooth; add powdered sugar and vanilla, then fold in strawberry jam.
  5. Scoop cookie dough onto a lined baking sheet, flatten slightly, add cheesecake filling in the center, cover with more dough, and seal edges.
  6. Bake for 12-15 minutes or until edges are golden but centers remain soft.
  7. Cool slightly before drizzling with pink glaze and sprinkling with sparkling sugar.
