  • 1 pound lean ground beef
  • 2 medium carrots, diced
  • 3 medium celery stalks, diced
  • 1 medium onion, diced
  • 28 ounces crushed tomatoes
  • 32 ounces beef broth
  • 15 ounces white cannellini beans (drained and rinsed)
  • 15 ounces dark red kidney beans (drained and rinsed)
  • 1 cup ditalini pasta

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef until no longer pink.
  2. Transfer the cooked beef to a 6-quart slow cooker and add the carrots, celery, onion, crushed tomatoes, beef broth, Italian seasoning, salt, pepper, cannellini beans, and kidney beans.
  3. Cover and cook on LOW for 6 hours or HIGH for 4 hours.
  4. Thirty minutes before serving, stir in the uncooked ditalini pasta and cover until tender.
  5. Taste and adjust seasoning as needed before serving.
