  • 2 large eggplants
  • 1 lb ground beef (or lamb)
  • 2 cups crushed canned tomatoes
  • 2 tbsp Turkish red pepper paste (or tomato paste)
  • 2 tbsp olive oil
  • 1 white onion (diced)
  • 3 cloves garlic (minced)
  • Fresh mint and dill for garnish
  • Salt
  • Black pepper
  • Sumac
  • Aleppo pepper
  • Ground coriander

Instructions

  1. Preheat your oven to 400°F.
  2. Cut eggplants into large pieces and place them on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, then roast for about 30 minutes until tender.
  3. In a sauté pan over medium-high heat, add remaining olive oil and sauté diced onion and minced garlic with spices for about 6-7 minutes until onions are golden.
  4. Push onions aside, add ground beef to the center of the pan, breaking it apart as it cooks until browned.
  5. Stir in roasted eggplant, crushed tomatoes, and Turkish red pepper paste. Cover and simmer for 20 minutes.
  6. Meanwhile, mix Greek yogurt with minced garlic, dill, and lemon juice for the topping.
  7. Serve hot with yogurt sauce and fresh mint garnish.
