  • 4 boneless, skinless chicken breasts
  • 12 oz fettuccine pasta
  • 2 tbsp Cajun seasoning
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 1/2 cup reserved pasta water

Instructions

  1. Season chicken strips with Cajun seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-6 minutes until golden brown; remove and set aside.
  2. In the same skillet, combine chicken broth and heavy cream. Scrape any bits from the skillet and simmer for 2-3 minutes. Return chicken to the skillet to coat in sauce.
  3. Cook fettuccine according to package instructions; reserve 1/2 cup pasta water before draining.
  4. In the skillet, melt butter and sauté minced garlic until fragrant. Add reserved pasta water and seasonings, then stir in Parmesan cheese until thickened. Toss cooked fettuccine in the sauce and add the chicken back.
