  • 14.5 tbsp salted butter, melted & cooled (206 grams)
  • 3/4 cup dark brown sugar, packed (163 grams)
  • 3/4 cup granulated sugar (156 grams)
  • 1 and 1/2 tsp vanilla extract
  • 2 large eggs, at room temperature
  • 3 cups all-purpose flour (390 grams)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 cups semi-sweet chocolate chips
  • 35 pieces fruit juice soft caramels, chopped

Instructions

  1. Unwrap caramels, set aside 15 whole ones for stuffing, and chop the rest into smaller pieces.
  2. In a large mixing bowl, melt the butter and whisk in both sugars until combined.
  3. Add vanilla extract and eggs; whisk until smooth.
  4. Stir in dry ingredients until dough forms; mix in chocolate chips last.
  5. Chill dough for 20 minutes before scooping into balls.
  6. Form balls (about 90 grams each), flatten slightly, place a whole caramel inside, and wrap dough around it.
  7. Press chopped caramel pieces and extra chocolate chips on top of each ball.
  8. Preheat oven to 365°F (185°C) and line baking sheets with parchment paper.
  9. Bake cookies for about 10-12 minutes until edges are golden but centers look underdone.
  10. Let cool slightly on pans before transferring to a wire rack.
