  • 2 pounds Yukon gold potatoes
  • 3 cloves of garlic
  • 2 sprigs fresh rosemary
  • 4 tablespoons unsalted butter
  • ½ cup heavy cream
  • ½ teaspoon kosher salt
  • 1 tablespoon kosher salt (for cooking potatoes)
  • ¼ teaspoon black pepper

Instructions

  1. In a large pot, cover the diced Yukon gold potatoes with cold water and add 1 tablespoon of salt. Bring to a boil and simmer for 15-20 minutes until fork-tender.
  2. While potatoes are cooking, warm the heavy cream and butter in a small saucepan over medium heat until melted.
  3. Add garlic cloves and rosemary to the warmed cream mixture; steep for 10 minutes. Discard rosemary and mash in garlic if desired.
  4. Drain cooked potatoes and return them to the pot. Mash until smooth using a potato masher or ricer.
  5. Gradually mix in the warm cream mixture until well blended, then season with salt and pepper to taste.
  6. Serve hot and garnish with additional rosemary if desired.
