  • 1/3 cup olive oil
  • 1/4 tsp kosher salt

  • 8 oz feta cheese (chunk)
  • 32 oz vegetable broth
  • 2 tbsp honey

Instructions

  1. Preheat your oven to 400°F.
  2. In a Dutch oven, combine olive oil, butternut squash, and kosher salt. Toss to coat.
  3. Nestle feta and garlic bulb into the mixture and cover.
  4. Roast for 45 minutes to 1 hour until everything is tender.
