  • 7 store-bought oatmeal cookies
  • 28 ounce packages cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 3/4 cup white chocolate melts
  • 18 ounce container Cool Whip, thawed & divided
  • 1 cup diced strawberries
  • 1 cup blueberries
  • 7 whole strawberries
  • Red and blue sprinkles

Instructions

  1. Crush the oatmeal cookies into fine crumbs and distribute evenly in seven 5-ounce cups.
  2. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy.
  3. Melt the white chocolate according to package instructions; dip whole strawberries and let them set on wax paper.
  4. Mix remaining melted chocolate into the cream cheese mixture and gently fold in 1½ cups of Cool Whip.
  5. Spoon the cheesecake mixture into piping bags and layer it over the cookie crumbs in each cup.
  6. Add diced strawberries and blueberries between layers of cheesecake mixture.
  7. Top with more cheesecake mixture and pipe additional Cool Whip on top.
  8. Garnish each parfait with a chocolate-covered strawberry and sprinkles before serving.
