  • 1 tbsp pumpkin pie spice
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 10 tbsp unsalted butter, softened
  • 1 1/2 cups granulated white sugar
  • 2 eggs, at room temperature
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk, at room temperature
  • 1 cup canned pumpkin puree, at room temperature
  • 1/4 cup espresso or strong coffee
  • 1/3 cup whole milk
  • 1/2 cup sweetened condensed milk
  • 1/4 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, cold
  • 2 cups powdered sugar
  • 1 1/2 tsp vanilla extract
  • 2 tsp instant espresso powder
  • 1 1/2 tsp pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt.
  3. In another bowl, cream softened butter and granulated sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
  4. Combine buttermilk and pumpkin puree into the butter mixture until smooth.
  5. Gradually add dry ingredients into the wet mixture, mixing until just combined.
  6. Pour batter into the prepared pan and bake for about 38 minutes or until a toothpick comes out clean. Let cool completely.
  7. Prepare the soak by whisking together espresso, whole milk, sweetened condensed milk, pumpkin pie spice, and vanilla extract.
  8. Poke holes in the cooled cake and pour soak mixture evenly over it.
  9. For frosting, beat softened butter with cream cheese; gradually add powdered sugar and then mix in vanilla extract, instant espresso powder, and pumpkin pie spice until fluffy.
  10. Frost the cooled cake evenly and enjoy!
