  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish by greasing it or lining it with parchment paper.
  2. In a large bowl, mix together flour, oats, brown sugar, baking soda, and salt. Pour in the melted butter and stir until combined to form the crumble mixture.
  3. Press half of the crumble mixture into the prepared baking dish.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the crumble base and spread evenly.
  6. Top with remaining crumble mixture and optional chopped walnuts for extra crunch.
  7. Bake for 30–35 minutes until golden brown and set in the middle. Allow cooling completely before slicing.
