  • 1 ½ cups heavy whipping cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups shredded coconut (sweetened or unsweetened)
  • 23 drops pink food coloring
  • 1 tbsp milk (to moisten coconut if needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. Cream together the softened butter and granulated sugar until light and fluffy, then add the eggs and vanilla extract.
  4. Gradually mix in the dry ingredients alternately with buttermilk until just combined. Stir in hot water to create a smooth batter.
  5. Pour into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean. Cool completely.
  6. For the topping, beat heavy cream with powdered sugar and vanilla until fluffy. Spread over the cooled cake.
  7. Mix shredded coconut with pink food coloring until evenly coated; sprinkle over the frosting and press lightly.
