  • 2½ cups crushed pretzels
  • ¾ cup granulated sugar
  • ¾ cup melted butter
  • 12 ounces cream cheese
  • 2 teaspoons vanilla extract
  • 12 ounces Cool Whip
  • 6 ounces peach vegan gelatin
  • 4 cups fresh peaches (peeled and diced)
  • 2 cups boiling water
  • 2 cups ice water

Instructions

  1. Preheat oven to 350°F and lightly butter a 9×13 inch baking pan.
  2. In a bowl, mix crushed pretzels, ¾ cup sugar, and melted butter. Press into the bottom of the pan and bake for 10 minutes until golden. Cool completely.
  3. Beat cream cheese, remaining sugar, and vanilla extract until smooth in a large bowl. Gently fold in Cool Whip.
  4. Spread cream cheese mixture over cooled crust evenly.
  5. Dissolve peach vegan gelatin in boiling water, then add ice water and stir in diced peaches.
  6. Chill jello mixture until slightly thickened (about 15 minutes), then pour over cream cheese layer.
  7. Cover and refrigerate for at least two hours or until set.
