  • 1 lb ground beef
  • 15 oz dark red kidney beans (drained and rinsed)
  • 15 oz cannellini beans (drained and rinsed)
  • 1 small yellow onion (diced)
  • 2 medium carrots (diced)
  • 3 ribs celery (diced)
  • 2 cloves garlic (minced)
  • 29 oz diced tomatoes
  • 15 oz tomato sauce
  • 1 cup beef broth
  • 8 oz Ditalini pasta
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp sugar

Instructions

  1. In a large Dutch oven over medium heat, brown the ground beef for about 7 minutes until fully cooked.
  2. Drain excess grease, then add the diced onion, carrots, and celery. Cook for about 10 minutes until softened; add minced garlic and sauté for another minute.
  3. Stir in the diced tomatoes, tomato sauce, broth, and seasonings; bring to a simmer and cook for about 20 minutes.
  4. Meanwhile, cook the Ditalini pasta separately according to package instructions; drain.
  5. Just before serving, mix the drained pasta into the soup and garnish with fresh basil if desired.
