  • 2 eggplants, sliced
  • 1 lb ground lamb or beef
  • 1 large sweet onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) canned tomatoes
  • 1 cinnamon stick
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sprinkle salt on sliced eggplants; let sit for 30 minutes, then rinse and pat dry.
  3. In a skillet, heat olive oil over medium heat and sauté eggplant until golden brown.
  4. In the same skillet, cook onions until translucent, add garlic, then brown the meat.
  5. Stir in canned tomatoes and cinnamon stick; simmer for 15-20 minutes.
  6. Make the béchamel by melting butter in a saucepan, whisking in flour, then gradually adding milk until thickened.
  7. Layer half of the eggplant slices in a baking dish, followed by half of the meat mixture. Repeat layers and finish with béchamel sauce.
  8. Cover with foil and bake for 30 minutes; remove foil and bake an additional 15-20 minutes until golden brown.
  9. Let rest for at least 15 minutes before slicing.
