  • 1/4 cup orange juice
  • Zest of 1 large orange, grated

  • 3 tbsp sparkling sugar (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with muffin liners.
  2. In a mixing bowl, whisk together sugar, eggs, vegetable oil, milk, orange juice, and grated orange zest until well combined.
  3. In another bowl, mix together flour, baking powder, baking soda, and salt.
  4. Gently fold the dry ingredients into the wet mixture using a spatula until just combined—small lumps are okay; do not overmix.
  5. Fill each muffin cup about two-thirds full with batter and sprinkle sparkling sugar on top.
  6. Bake for 20-22 minutes until golden brown; a toothpick inserted should come out clean.
