  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 3 tbsp butter
  • Salt and black pepper
  • 1 tsp Cajun seasoning
  • 1 cup long-grain white rice
  • 2 1/4 cups chicken broth
  • Zest and juice of 1 lemon
  • 4 cloves garlic
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Season chicken with salt, pepper, Cajun seasoning, and smoked paprika.
  2. Heat olive oil and 1 tbsp butter in a large deep skillet over medium-high heat. Cook the chicken for 5–7 minutes until golden brown; set aside.
  3. In the same skillet, melt remaining butter and sauté minced garlic for about a minute.
  4. Add uncooked rice, stirring to coat with garlic butter for 1–2 minutes.
  5. Pour in chicken broth and lemon juice; bring to a boil, then reduce heat and simmer for 15–18 minutes until rice is tender.
  6. Stir in heavy cream, lemon zest, Parmesan cheese, and Italian seasoning; simmer for another few minutes.
  7. Return cooked chicken to the pan; mix well and heat through before serving.
