  • 1 can (15 oz) cannellini beans
  • 1 can (15 oz) dark red kidney beans
  • 1 chopped onion
  • 2 cubed carrots
  • 2 chopped celery stalks
  • 1 cup ditalini pasta
  • 32 oz beef broth
  • 28 oz crushed tomatoes
  • 2 bay leaves
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp thyme
  • 2 cloves chopped garlic

Instructions

  1. Brown the ground beef in a skillet over medium heat; drain excess fat.
  2. Transfer the browned beef to your slow cooker.
  3. Add crushed tomatoes and herbs (oregano, basil, thyme) along with bay leaves.
  4. Stir in chopped onions, carrots, celery, and both cans of beans (do not drain).
  5. Pour in the beef broth until all ingredients are submerged.
  6. Cover and cook on low for 4 hours or high for 2 hours.
  7. Add ditalini pasta during the last 30 minutes of cooking.
