  • 2 pounds ground beef
  • 1 cup panko bread crumbs
  • 1 cup milk
  • 1 medium sized yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon butter
  • 1 large egg
  • 1 tablespoon vinegar substitute (for Worcestershire sauce)
  • 1/2 teaspoon dried thyme (can use less or replace with 1Tbsp fresh thyme)
  • 1 teaspoon kosher salt
  • 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon spicy brown mustard

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, soak 1 cup of panko bread crumbs in 1 cup of milk until well mixed.
  3. Sauté diced onion in 1 tablespoon of butter over medium heat until fragrant, then add minced garlic and cook for an additional few minutes.
  4. In a large bowl, mix together the soaked bread crumbs, 2 pounds of ground beef, 1 egg, sautéed onions and garlic, vinegar substitute, dried thyme, and kosher salt until just combined. Shape into a loaf on the baking sheet.
  5. Bake uncovered for 40 minutes while preparing the sauce by mixing ketchup, spicy brown mustard, and brown sugar in another bowl.
  6. After 40 minutes, spread the sauce over the meatloaf and bake for an additional 30-35 minutes or until it reaches an internal temperature of 160°F (70°C).
