  • 8 ounces mozzarella cheese (cut into cubes)
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon fresh rosemary (chopped)
  • 1/4 cup baking soda
  • 1/4 cup unsalted butter (melted)
  • Coarse sea salt (for sprinkling)

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until foamy.
  2. In another bowl, whisk together flour and salt. Gradually mix this into the yeast mixture.
  3. Knead the dough by hand for about 8 minutes or use a stand mixer for about 5 minutes until smooth.
  4. Incorporate chopped rosemary and grated parmesan into the dough, then allow it to rise in a greased bowl covered with a towel for about an hour or until doubled in size.
  5. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  6. Punch down the risen dough, divide it into eight pieces, flatten each piece, place mozzarella in the center, seal it into a ball, then twist into pretzel shape.
  7. Boil water and add baking soda; drop each pretzel in the water for about 30 seconds before draining on paper towels.
  8. Brush with melted butter and sprinkle with coarse sea salt before baking for about 12-15 minutes until golden brown.
