  • 1 package (8 oz) refrigerated cheese tortellini
  • 4 oz provolone cheese, cut into small squares
  • 50 slices turkey
  • 25 pimiento-stuffed green olives or black olives
  • 25 small cherry tomatoes
  • 1/2 cup olive oil
  • 1/4 cup red apple vinegar
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon honey
  • 2 teaspoons lemon juice
  • 1 & 1/2 teaspoons dried Italian seasoning
  • 3/4 teaspoon garlic powder
  • pinch of cracked red pepper flakes
  • pinch of black pepper

Instructions

  1. Prepare the dressing by shaking all ingredients in a jar until well combined.
  2. Cook the tortellini according to package directions in salted boiling water; drain and cool.
  3. Marinate the tortellini in the dressing for at least 3 hours or overnight.
  4. Assemble the kabobs by threading tortellini, folded turkey slices, cheese squares, and olives or tomatoes onto skewers.
  5. Serve chilled or at room temperature on a platter.
