  • 2 medium apples (peeled, cored, and diced)
  • ⅓ cup brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp allspice
  • ¼ tsp ground ginger
  • Pinch of salt
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch slurry
  • 1 package premade pie dough (contains 2 crusts)
  • Egg wash (1 beaten egg mixed with 1 tbsp milk)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix diced apples with brown sugar, cinnamon, nutmeg, allspice, ginger, salt, butter, vanilla extract, and cornstarch slurry until well-coated.
  3. Roll out the premade pie dough on a floured surface. Cut circles for mini pie bases and tops.
  4. Place one dough circle in each muffin tin section. Fill with apple mixture and top with another dough circle, crimping edges to seal.
  5. Brush each pie with egg wash and sprinkle coarse sugar on top.
  6. Bake for about 25 minutes or until golden brown. Cool slightly before serving.
