  • 3 large apples
  • 1 onion
  • 5 cloves garlic
  • ¼ cup olive oil
  • ¼ cup maple syrup
  • 3 tablespoons stone ground Dijon mustard
  • Salt and pepper to taste
  • Fresh thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Core the apples and chop them into ½” cubes. Slice carrots on the bias into ¼” thick pieces. Dice the onion and finely chop the garlic.
  3. In a mixing bowl, whisk together olive oil, maple syrup, mustard, salt, pepper, and thyme until smooth.
  4. Combine the chopped carrots, apples, onions, and garlic in the bowl with the dressing. Toss until well coated.
  5. Spread the mixture evenly on a baking sheet and roast for 15 minutes; flip to brown the other side.
  6. Continue roasting for another 10 to 15 minutes until tender.
