  • 1/2 cup sliced kalamata olives
  • Fresh herbs (parsley, mint, basil)
  • Zest and juice of lemon
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon coarse salt

Instructions

  1. Cook couscous: Bring 1 cup water and 1/2 tsp salt to a boil in a medium pot. Stir in 2 tbsp olive oil and couscous. Remove from heat and cover for about 5 minutes until absorbed.
  2. Prepare vegetables: Dice tomatoes, cucumber, bell pepper, and chop red onion finely. Rinse chickpeas.
  3. Combine ingredients: In a large mixing bowl, mix cooked couscous with vegetables, olives, and herbs.
  4. Make dressing: Whisk together lemon zest, juice, vinegar, salt, pepper, and olive oil in a small bowl.
