  • 4 tablespoons butter
  • 1/2 teaspoon salt
  • 3 cups water
  • Zest and juice of 1 lemon
  • 1/8 teaspoon turmeric (optional)
  • 1 tablespoon chopped parsley (for garnish)

Instructions

  1. Rinse the rice in cold water using a fine mesh strainer until the water runs clear, about 1 minute.
  2. In a medium pot, melt butter over medium heat. Stir in rinsed rice and salt; cook for about 3 minutes until slightly toasted.
  3. Add water, lemon zest, and juice to the pot. Bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes.
  4. Remove from heat and let sit covered for an additional 5-10 minutes.
  5. Fluff with a fork, adding turmeric if desired. Garnish with chopped parsley before serving.
