  • 1 lb potato gnocchi
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 3 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream)
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Prepare your ingredients by slicing the chicken, halving the tomatoes, and measuring out the liquid components.
  2. In a large skillet over medium heat, add olive oil. Season the chicken with salt and pepper; cook until golden brown (about 5–7 minutes). Remove from skillet.
  3. Sauté minced garlic in the same skillet for about 30 seconds, then add cherry tomatoes for another 2 minutes.
  4. Pour in chicken broth and bring to a simmer. Remove from heat briefly before stirring in heavy cream along with lemon zest and juice.
  5. Add gnocchi; cook for 3–4 minutes until tender. Fold in spinach just before serving.
  6. Return the cooked chicken to the skillet, adjust seasoning if necessary, and garnish with fresh herbs.
