  • 16 oz dry rotini
  • 10 oz hard turkey slices
  • 3 cups grape tomatoes
  • 1 can black olives
  • 2 cups chopped bell peppers
  • 1/2 cup chopped red onion
  • 8 oz fresh mozzarella pearls
  • 3 oz freshly grated parmesan
  • Fresh parsley and basil
  • 1 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tsp dried oregano
  • 2 tsp dijon mustard
  • 1 tsp honey
  • 2 tsp minced garlic
  • 1/2 tsp red pepper flakes
  • Salt and freshly ground black pepper

Instructions

  1. Cook the rotini according to package instructions until al dente. Drain and reserve some pasta water.
  2. Spread the pasta on a baking sheet to cool for about 15 minutes.
  3. While cooling, chop the turkey, veggies, and prepare the dressing by whisking together olive oil, lemon juice, oregano, mustard, honey, garlic, red pepper flakes, salt, and pepper.
  4. In a large bowl, combine cooled pasta with turkey slices, tomatoes, olives, bell peppers, red onion, mozzarella pearls, parmesan cheese, parsley, and basil.
  5. Pour the dressing over the salad along with reserved pasta water; toss gently to coat.
  6. Serve immediately or chill for 1-2 hours before serving for a refreshing twist.
