  • 3 pounds beef stew meat (or lamb)
  • 1/4 cup all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons fresh rosemary
  • 1 teaspoon dried thyme
  • 4 cups beef broth
  • 5 carrots (peeled and cut into chunks)
  • 1 cup frozen peas
  • 2 bay leaves

Instructions

  1. Prepare all ingredients by peeling and chopping the carrots.
  2. Heat olive oil in a Dutch oven over medium-high heat until shimmering.
  3. In a large Ziploc bag, combine beef with flour, salt, pepper, garlic powder, onion powder, rosemary, and thyme; shake to coat.
  4. Sear the coated meat in the hot oil until browned on all sides.
  5. Slowly pour in beef broth while stirring; add carrots and bay leaves. Bring to a boil.
  6. Reduce heat to medium-low, cover, and simmer for about 45 minutes, stirring occasionally.
  7. Five minutes before serving, stir in frozen peas.
  8. Remove bay leaves before serving with hot mashed potatoes.
