  • 4 pounds apples (about 9 medium-sized), peeled and cored
  • 1 cup apple cider
  • 3/4 cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon kosher salt
  • Juice of half a lemon (about 1 tablespoon)

Instructions

  1. In a large pot, combine apples, apple cider, brown sugar, cinnamon, cloves, and salt. Cook over medium-low heat uncovered for about 1 hour until apples are very soft.
  2. Using a hand blender, puree the mixture until smooth. If necessary, blend in batches using a regular blender.
  3. Return the puree to the pot and continue to cook uncovered over medium-low heat for an additional hour until thickened and deep mahogany in color.
  4. Stir in lemon juice and transfer to jars for storage. Refrigerate for optimal flavor.
