  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1/2 tsp coarse salt
  • 1/2 tsp vanilla extract
  • 1/2 cup cold unsalted butter, diced
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup semi-sweet chocolate chips
  • 2 tsp vanilla extract
  • 2 large eggs
  • 2/3 cup unsweetened cocoa powder
  • 1/3 cup all-purpose flour
  • 1/4 tsp coarse salt
  • 12 tsp instant espresso powder, optional
  • 4 oz good-quality dark chocolate
  • 4 oz heavy whipping cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a 9×13 inch baking pan with parchment paper.
  2. In a mixing bowl, combine flour, sugar, salt, and vanilla for the shortbread layer. Cut in cold butter until crumbly and press into the bottom of the pan. Bake for 15 minutes until golden.
  3. For the brownie layer, melt butter and mix with sugar and chocolate chips until smooth. Stir in eggs and vanilla, then fold in cocoa powder, flour, and salt.
  4. Pour brownie batter over cooled shortbread and bake for an additional 25 minutes or until a toothpick comes out with moist crumbs.
  5. To make the ganache, heat cream until boiling, pour over chopped dark chocolate, let sit for a few minutes, then stir until smooth.
  6. Once brownies have cooled completely, pour ganache on top and let set before slicing.
