  • ¾ cup whole wheat flour (or gluten-free flour)
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp coconut oil (or unsalted butter, melted and cooled slightly)
  • 1 large egg (room temperature)
  • 1 tsp almond extract
  • ¼ cup pure maple syrup (room temperature)
  • 6 tbsp unsweetened vanilla almond milk (room temperature)
  • ½ cup diced peaches

Instructions

  1. In a medium bowl, whisk together oats, flour, cinnamon, nutmeg, baking powder, and salt.
  2. In another bowl, mix melted coconut oil or butter with egg and almond extract. Add maple syrup and almond milk.
  3. Combine both mixtures until just incorporated; gently fold in diced peaches.
  4. Chill dough for 30 minutes.
  5. Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
  6. Drop rounded scoops of dough onto the baking sheet and flatten slightly.
  7. Bake for 9-12 minutes until lightly golden; cool on the pan for 10 minutes before transferring to a wire rack.
