  • 4 nectarines, pitted and quartered
  • 8 ounces burrata cheese, torn
  • 8 slices turkey slices
  • 4 ounces cherry tomatoes, halved
  • 2 heirloom tomatoes, halved and cut into eighths
  • 1/2 cup fresh cherries, pitted and halved
  • 1/2 cup mixed baby spring greens
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white apple vinegar
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh oregano, roughly minced
  • 1 tablespoon fresh mint, roughly minced
  • 1 tablespoon fresh lemon thyme leaves
  • 1/2 cup extra virgin olive oil
  • Finishing salt
  • Fresh ground black pepper

Instructions

  1. Preheat the grill or grill pan over medium-high heat. Lightly brush the nectarine slices with olive oil.
  2. Grill the nectarines for 2–3 minutes on each side until they have grill marks and soften slightly. Remove from heat and allow to cool.
  3. In a small bowl, whisk together the vinaigrette ingredients: lemon juice, apple vinegar, lemon zest, oregano, mint, thyme, olive oil, salt, and pepper.
  4. In a large salad bowl, combine mixed baby greens, cherry tomatoes, heirloom tomatoes, cherries, and vinaigrette until evenly coated. Top with burrata cheese and sliced turkey.
  5. Garnish with additional herbs and freshly ground black pepper before serving.
