  • 1 chicken breast
  • 1 tablespoon Ultimate Dry Rub (or similar seasoning)
  • 2 pieces turkey bacon
  • 1 head romaine lettuce, chopped
  • ½ cup cherry tomatoes
  • ¼ red onion, sliced thinly
  • ½ avocado, sliced
  • 1 carrot, grated
  • 1 celery stalk, sliced
  • ½ cup Franks RedHot hot sauce (or your favorite wing sauce)
  • 1 tablespoon unsalted butter
  • ¼ cup blue cheese crumbles (optional)
  • Ranch dressing (pour to your preference)
  • Salt and pepper to taste

Instructions

  1. Preheat grill or grill pan over medium-high heat. Season chicken with dry rub.
  2. Grill chicken for 6-7 minutes per side until cooked through (165°F internal temperature). In the last minute, brush with melted butter mixed with hot sauce.
  3. Cook turkey bacon until crispy; chop into bite-sized pieces.
  4. In a mixing bowl, combine romaine lettuce, cherry tomatoes, red onion, avocado, carrot, celery, turkey bacon, and blue cheese crumbles.
  5. Slice grilled chicken and place on top of the salad. Drizzle ranch dressing as desired and season with salt and pepper before serving.
