  • 1 kg Baking Potatoes (peeled & diced)
  • 1 liter Chicken Stock
  • 23 Lemons
  • 3 tbsp Olive Oil
  • 2 tsp Dried Oregano
  • 200g Feta Cheese
  • 100g Cream Cheese
  • 1 Chicken Oxo Cube
  • 1 tbsp Honey
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 small bulb of Garlic (cloves left in skins and lightly smashed)
  • 1 tbsp finely diced Fresh Parsley

Instructions

  1. Boil the diced potatoes in chicken stock and lemon juice until knife tender. Drain and let them steam dry for 10 minutes.
  2. Preheat your oven to 390F/200C. Toss the potatoes with olive oil, oregano, salt, pepper, and garlic, then roast for 40-45 minutes until golden brown.
  3. In a food processor, blend feta cheese, cream cheese, olive oil, and honey until smooth.
  4. Spread whipped feta on a serving dish and top with roasted potatoes. Garnish with fresh parsley and a squeeze of lemon.
