  • 1/3 cup molasses (not blackstrap)
  • 1/3 cup turbinado or granulated sugar
  • 6 tablespoons unsalted butter (softened to room temperature)
  • 23 cups icing sugar (sifted)
  • 34 tablespoons eggnog
  • 1/4 teaspoon vanilla extract (alcohol-free, optional)

Instructions

  1. Whisk together flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt in one bowl; set aside.
  2. In another bowl, beat softened butter and brown sugar until smooth. Add egg, yolk, vanilla extract, and molasses; mix well.
  3. Gradually incorporate the dry ingredients into the wet mixture until fully combined. Chill dough for at least 30 minutes.
  4. Preheat oven to 350°F (175°C). Roll chilled dough into balls, coat in sugar, and place on lined cookie sheets.
  5. Bake for 8–10 minutes until just set. Cool on wire racks.
  6. For frosting: Beat softened butter, gradually add icing sugar and eggnog until desired consistency is reached.
  7. Assemble cookies by spreading frosting on one cookie and topping with another.
